    Hi, I am using a recipe that requires you to roast almonds in the oven and then grind them. In my local supermarket I can buy almond meal, which is ground almonds. However I am guessing that the almonds are raw and not roasted. I was thinking of getting them and toasting the meal in a frying pan or an oven. Has anyone done this, or have any ideas on it? Buying the ground meal would be much easier for me as I could skip the grinding step. Thanks!Roasting ground almonds for biscuit recipe?
    Toasting or roasting the almond meal would not work. The meal is very delicate and would probably burn. I know it's a pain, but your best bet is to toast the almonds in the oven, then grind them. Sorry.Roasting ground almonds for biscuit recipe?
    Roasting really should be done in a slow 200* oven for about 2 hours. Never did the already ground kind ....I see no reason it would not work.

    Here's a traditional one:





    Buttermilk Biscuits:


    2 cups AP flour


    1 Tablespoon baking powder


    3/4 teaspoon salt


    1/2 teaspoon bakng soda


    5 tablespoons chilled solid vegetable shortening.


    1 cup buttermilk or sour milk. (1cup milk w 1 teas. vinegar let stand 5 minutes)





    Preheat oven to 425. Sift dry ingredients.


    Break shortening into small pieces and put in the flour mix.


    With your fingers, mix shortening into the flour mix unti it resembles a coarse meal. It's fine if there are a few lumps of shortening.


    Add milk and mix with a fork until a dough forms.


    Knead 4-6 times and bring it together in a ball.


    Divide into 12 pieces.


    Shape biscuits by hand.


    Lay in an ungreased pan just touching.


    Bake at 425 for 12 to 15 minutes.





    Yes, you could roll out the dough and cut them. But, you don't need to. I haven't done that in well over 20 years.








    LAZY COOKS BISCUITS: Makes 8





    I use this recipe a lot. (It's really a simple scone recipe without the sugar and spice). Makes a light biscuit.





    2 cups flour


    1 Tablespoon baking powder


    1/2 teaspoon salt


    2/3 cup milk


    1/4 cup oil


    1 egg


    Preheat oven to 425 degrees. Do it...it matters!





    Mix dry ingredients together in a large bowl.


    Whisk wet ingredients together in a small bowl.


    Add wet ingredients to flour mixture and combine quickly with a large spoon.


    Knead only enough to bring together. (4-6 times)


    Pull off a wad of dough and shape by hand.


    Lay biscuits in the pan just touching.


    Bake 12 to 15 minutes.

    3/4 cup buttermilk





    In a mixing bowl, combine dry ingredients together with a fork. Cut in the shortening using a pastry blender until mixture resembles coarse crumbs. Make a well in the center and add buttermilk. Quickly fold dry ingredients into buttermilk with your hands until a sticky dough forms.


    Turn dough out onto floured surface. Gently fold the dough over itself 3 or 4 times to create layers. Roll dough out to 3/4-inch thick. Cut with a 3-inch biscuit cutter. Transfer dough rounds to a sheet pan. Gather scraps and repeat. Make a dimple in the center to help the top rise evenly. Brush with butter. Bake for 15 minutes in a preheated 400 degree oven until golden brown.
    google any recipe and it will give you the ingredients, amounts, cooking time etc.





    however, the most important things to remember are:





    1. sift all your dry ingredients together TWICE before adding anything else





    2. Cut the lard or shortening in THOROUGHLY





    3. Keep the liquid COLD until you add it





    4. Don't overmix after you add the liquid





    5. handle the dough as little as possible while forming the biscuits





    6. If rolling and cutting, push straight down on the cutter without twisting.
    Yeap.


    Ingredients: Packet of Digestives.


    Method: Open packet and serve.
    Kentucky FRIED CHICKEN..BISCUITS





    1 1/2 cups flour 1 1/2 teaspoon salt 1 Tablespoon sugar


    1 Tablespoon baking powder 2/3 cup milk 1/3 cup vegetable shortening





    Preheat oven to 425潞F. Sift together flour, salt, sugar and baking powder


    into mixing bowl. Make a well in the flour mix and add the milk.





    Add shortening and begin kneading with hands (to cut in) the vegetable


    shortening and flour in the milk until thoroughly mixed. Add milk, if needed to form, and mix. Turn onto floured board, and knead gently 6 to 8 times.





    Pat dough to 1/2-inch thickness. Cut into biscuits. Place on baking sheet


    and brown in oven 10-13 minutes. Makes about 9 biscuits.

    a. Mix to a soft dough, and roll.


    b. Cut in squares or with cookie cutter.


    c. Bake in preheated 175掳C oven for about 20 minutes.








    Date Bars





    Ingredients


    200g butter (melted)


    120g flour (sifted)


    1 teaspoon baking powder (sifted)


    1/2 teaspoon salt


    200g sugar


    300g dates (cut)


    150g walnut meats (cut)


    3 eggs (well beaten)





    Action


    a. Combine nuts, dates and dry ingredients together.


    b. Add eggs, butter into the date mixture, and mix well.


    c. Pour it into a 23x23 cm greased pan.


    d. Bake at 175掳C oven for 30 minutes.


    e. When cool, cut in small squares and roll,


    in powdered sugar.





    Note: You may remove the walnuts.

    Later: Just occoured to me that you might be asking this from Europe where little baked sweets are called biscuits. Here in the states biscuits are a savory puffy pastry thing we eat with dinner.

    Vanilla extract or essence is optional.
    The above recipe for the cookie bars is excellent but if you are in the UK you may need to substitute the graham crackers with crushed digestives or hobnobs. I don't think graham crackers are very easy to find here.

    Well I am unsure of other biscuit recipes but I do have a good one that my family loves!





    lightly saute about 1/2 cup onions and 1/2 cup celery in pan add whole cut up chicken and then water...let boil for about 1 hour. Remove chicken let cool then debone...put chicken back in pot and add about 1 average potato per person and a small package of whole carrots cut in pieces. Let boil for another hour to hour and a half (until carrots are soft). Then I use the drop biscuit recipe on the biscuit box and just spoon the mixture on top of the water..turn down heat a little and put on a lid for about 15min. Wah Lah!





    It is an easy recipe...we do not call it chicken and dumplings..we just call it chicken stew.
    Really good with eggs and sausage gravy. Also I use them for strawberry shortcake. If they are uncooked they are easily used for a topping for chicken pot pie.
    I'm going to assume that biscuits as being a bread and not a cookie. Like the kind that pop out of the can.





    I like to take any leftover biscuits and make chocolate toast out of them. Place on tray in over and brown till almost hard,


    butter them realy well, and sprinkle Nestles chocolate powder for milk for them, or use a drizzle of Hershey's chocolate syrup over them. Return bake to oven and broil till bubbly. Enjoy.

    The recipe you have sound like a scone recipe. which is fine except for the salt ingredient which is far too high, you only need a PINCH of salt not a teaspoon.


    I would also loose the mashed potato, as well.

    Got one, this is my mums not-so-secret recipe, its makes perfectly delicious yummy biscuits!





    8 oz self raising flour


    pinch of salt


    6 oz butter


    4 oz caster or sifted icing sugar


    1 egg beaten





    sift the flour and salt into a mixing bowl, rub in all the butter finely until the mixture resembles fine breadcrumbs.


    Then add the sugar, mix to a very stiff dough with the beaten egg.


    Turn out on to a lightly floured board and knead gently until smooth.





    Put into a polythene bag or wrap in aluminium foil and leave for about 30 minutes. Roll out thinly and cut into about 30 rounds with a 5cm (2';) plain or flutted biscuit cutter, put the biscuits onto the greased baking sheets and prick well with a fork. Bake in oven preheated to 180 oc, 350 f, gas mark 4 for 20-30 minutes.


    Leave on trays for a few minutes before transferring to wire cooling racks. When cold store in airtight tins





    I made these recently for halloween and they went so quickly that I didnt get one myself :( might make them again later though.

    Yes. Buy ';Bisquick';. It makes wonderful tasting drop biscuits. Also it's economic.

    Does anyone have a good homemade biscuit recipe?

    Ok, does my heart good to find someone who actually appreciates real biscuits. First you're gonna need about 2 cups all purpose flour, stir it just a bit before you measure it so it won't be packed.


    Put the flour in a large bowl then add 2 1/2 tsp baking powder, 1/4 tsp baking soda, 1 tsp salt. I usually use a sifter to help mix all those ingrediants. After it is mixed then add 2 tablespoons of chilled butter and 1/4 cup of chilled shortening, I use Crisco. Cut the butter and shortening in until you have pieces about the size of small peas.


    Make a hole in the middle and add 3/4 cup of buttermilk. Stir this in until it is clumping together adding a little more buttermilk if needed.


    Put the dough on a floured surface and roll or pat it out until it's about 1/2'; thick. Then use whatever you have, I use a large glass cause I don't have a biscuit cutter, to cut out the biscuits. Bake on the center rack 10 - 12 minutes at 450 degree oven. Have plenty of butter and jam or jelly ready to put on'em when they're done or gravy to pour over them.Does anyone have a good homemade biscuit recipe?

    Preparation:

    Put all the dry ingredients into a bowl. Using a fork, blend the margarine into the dry ingredients until the mixture breaks down into fine particles.





    Add the soy milk and stir until the particles cling together. Turn out onto a floured bread board or countertop and knead for 1 to 2 minutes or until the dough is smooth. Add more flour as needed if the dough is sticky.





    With a rolling pin, roll the dough out to about 1/2 inch thickness. Cut into rounds (a drinking glass works well), place on an ungreased cookie sheet and bake for 12 to 15 minutes. Serve hot.

    These are nice with a few drops of vanilla essence added at the creaming stage.





    Instead of the chocolate topping you can sprinkle the biscuits with sugar before cooking (although the choccie topping is best!).


    Method





    Cream the marg and sugar until very soft. Add the flour and mix well.





    Using a piping bag, pipe the mixture into fingers, rosettes and rings onto a greased baking tray.





    Chill in a fridge for 15 minutes.





    Bake in a moderate oven for 10 to 15 minutes. Cool on a wire tray.





    Cover the biscuits with melted chocolate and leave to set.

    4 ripe bananas

    1 teaspoon cardamom powder


    3/4 teaspoon salt


    1 cup whole wheat flour


    1 1/2 cups white flour


    1 teaspoon baking powder


    1 teaspoon baking soda


    Directions


    1Preheat oven to 350 degrees


    2Grease or place cups in tin for 12 muffins.


    3Mash bananas in a bowl.


    4Add oil, sugar or maple syrup, salt, cinnomon and cardomon and mix.


    5Add flours, baking powder and baking soda and mix.


    6Spoon into muffin tins and bake for 20-25 minutes until muffins are done and slightly browned on top.



    Biscuits





    Ingredients:





    1 cup unbleached flour (if available)


    1 cup whole wheat flour (keeps best in fridge)


    1/4 cup wheat germ (keeps best in fridge)


    1 tablespoon baking powder (I prefer Featherweight aluminum-free)


    1/2 teaspoon Salt Sense (lower sodium, but other salt is fine)


    1/4 cup canola oil (or vegetable or light olive oil)


    6-8 oz. almond milk (or soy milk, rice milk, etc., any-fat version)





    Directions:





    Use a large bowl. Stir the dry ingredients together.





    Pour in the oil, then cut it in with a pastry blender or two butter knives until mixture is pebbly -- small pebbles throughout.





    Gradually stir in the milk. I eyeball it at this point, pouring straight from the container. Stop adding milk when the mixture forms a ball, separating from the bowl sides.





    Put foil on a baking sheet (or use a nonstick one) and preheat the oven to 450 degrees or so. Divide the dough into 6 to 12 pieces and place on the sheet, evenly spaced. Bake for about 10 minutes -- biscuits will be firm to the touch with a little golden color when done, slightly doughy on the inside.





    Good hot or cold, plain or with jam or margarine. Very filling.





    Serves: 6-12 biscuits

    Ginger and Spice Cookies





    INGREDIENTS


    500 g sifted plain flour


    3 g baking soda/powder


    1 g ground ginger


    3 g ground cinnamon


    3 g ground cloves


    3 g salt


    2 eggs


    120 ml treacle


    250 g white sugar


    225 g unsalted butter


    5 ml vanilla extract





    DIRECTIONS


    Preheat oven to 175 degrees C.





    Cream the butter with the sugar until light and fluffy. Stir in molasses and eggs. Stir in vanilla. Sift together the flour, baking soda, ginger, cinnamon, cloves and salt. Gradually stir into the butter mixture. Lightly cover a piece of wax paper with sugar. Drop tablespoon-sized pieces of dough onto paper and coat with sugar.





    Bake 14 to 15 minutes in the preheated oven, or until golden brown. Let cool on wire racks.
    Chocolate Peanut Butter Drops





    2 cups sugar


    1/2 cup milk


    1/4 cup butter


    1/3 cocoa


    2 1/2 cup quick oats


    1/2 cup peanut butter


    1/2 tablespoon vanilla extract





    Directions





    1. Combine sugar, milk, butter, and cocoa in a medium saucepan. Cook over medium heat, stirring occasionally, until the mixture comes to a boil. Cook for two more minutes stirring constantly and then remove the pan from the heat.

    You can substitute your regular flour for whole wheat. It won't make that much difference. I also usually add a can of mixed vegetables or something similar, then cut down on the water or milk I'm using to make the batter. Then I use a new, cylinder shaped hairbrush (the kind with the hard pointy plastic bristles) to punch holes in the rolled out batter before cutting.Is there any homemade dog biscuit recipes that don't include meat or whole wheat flour?
    I make these for my dog all of the time, they are super easy and I think you'd be able to make them from stuff you have in your kitchen already :)





    1 1/2 Tbs. oil


    1 cup warm chicken stock, warm water or any other warm liquid of your choice


    1 3/4 cup flour


    1 1/4 cup oatmeal, uncooked


    1/4 to 1/2 cup peanut butter OR 1/3 to 1/2 cup cheese





    Mix oil, peanut butter and warm liquid together until peanut butter melts; stir in all of the rest of the ingredients until a dough forms. If you are using grated cheese, add it into the mixture with the flour instead of melting it into the liquid. Shape into 2 or 3 tubes, wrap in plastic wrap %26amp; refrigerate for an hour. I often place them into the freezer to speed up the chilling, which takes about 30 minutes in the freezer. Slice into 1/4'; biscuits and bake on a greased cookie sheet at 350 for 30 to 45 minutes, or until the biscuits are dry and crispy. Or you can refrigerate the dough and then roll out to 1/4'; thickness and cut out shapes with a cookie cutter and then bake.     Heat honey and peanut butter until runny (about 20 seconds in the microwave. So if you have a bigger or smaller dog, adjust the biscuit size (and the cooking time).

    hello! I have found an awesome recipe for doggy biscuits on Racheal Ray's website. They call for some olive oil, eggs and peanut butter and flour...and I did use unbleached all purpose flour instead of whole wheat. The difference is that whole wheat is much better for your dog but the recipe works the same.
    This is the recipe I use when I make my holiday gifts for our Pet friends!! Hope it helps!





    Basic Dog Biscuit Recipe

    2 cups all-purpose flour


    1/2 cup wheat germ


    1/2 cup brewer鈥檚 yeast (available at health-food stores)


    1 teaspoon salt


    3 tablespoon vegetable oil


    1 cup chicken stock





    Heat oven to 400 degrees.


    Line a sheet pan with parchment paper (or grease the pan). Mix flour, wheat germ, brewer鈥檚 yeast, and salt together in a medium bowl. In another mixing bowl, combine oil and garlic. Alternately add 1 cup chicken stock and flour mixture in 3 parts; mix until well combined. Turn out onto a floured surface and knead about 2 minutes by hand. The dough will be sticky.





    Roll dough out to about 1/2 inch thick. Cut out various shapes and place on prepared baking sheets. Bake 20 - 25 minutes. Turn off oven, leaving oven door closed. Leave pan in oven for 1 1/2 hours or up to overnight to allow the treats to dry.





    Store the treats in zip-closure bags in the refrigerator or you can freeze them as well.

    In a medium bowl, stir together the flour, graham cracker, oatmeal , bouillon, and grated cheese.


    Stir in the corn syrup, water, and jelly. Add flour if necessary to make a stiff dough.


    Spoon dough onto greased cookie sheet . Make two or four treats depending on the size of your dog. Sprinkle the tops of the treats with the white sugar. Bake in preheated oven for 16 minutes. Cool before serving.

In a separate bowl, stir together the butter and hot water until butter melts, then stir in the milk and egg. Make a well in the center of the dry ingredients, and pour in the wet ingredients. Mix until well blended. The dough will be stiff. If it is too stiff, add a bit more water. If it is too sticky, add more flour.


    On a lightly floured surface, knead the dough for a few turns. Roll out to 1/4 to 1/2 inch thickness, and cut into squares or into desired shapes using cookie cutters. Place treats about 1 inch apart on the prepared cookie sheets.

    put it on the grill! i cook with hardwood charcoal. but you can use propane too. use medium high heat. around 400 degrees. i like to season well and baste with a spicy bbq sauce. throw it on a pre-heated grill for about 15 minutes, then flip it and cook it the rest of the way on the other side. standard time is 20 mins per pound but use a meat thermometer for best results.

    Reduce oven temperature to 225 degrees F (110 degrees C), and continue cooking 1 hours. Remove from oven, and turn roast over so that the top is now covered with the gravy. Cover pan, and return to oven for a minimum of 45 minutes. Check doneness and if necessary cook for 15 minutes longer. Remove from oven, and let meat rest for 10 minutes before slicing.





    Big Daddy Biscuits





    2 cups all-purpose flour


    1 tablespoon baking powder


    1 teaspoon salt


    1 tablespoon white sugar


    1/3 cup shortening


    1 cup milk





    Preheat oven to 425 degrees F (220 degrees C).





    In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl.





    Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet.





    Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.
    Chuck roast you want to brown in oil in a dutch oven, then drain the fat off and cook it in water slowly. You can add seasonings, onions, etc. Then when the meat is done (an hour and a half or so?) you can make gravy out of the juices after you strain out the onion bits.





    I'd serve a green vegetable with it.

About an hour before serving, toss in potatoes cut into chunks. Some people also like to add green beans. Then just serve fresh-baked bread or bisuits with it.

    Grandma's Buttermilk Biscuits





    * 2 cups all-purpose flour


    * 2 teaspoons sugar


    * 1 tablespoon baking powder


    * 1 teaspoon salt


    * 1/2 teaspoon baking soda


    * 1/2 cup shortening or lard, chilled (see Note, below)


    * 3/4 cup plus 2 tablespoons buttermilk





    Preheat oven to 425掳F.





    Sift dry ingredients into a bowl. Cut in the shortening with a pastry blender, and add the buttermilk, blending quickly, just until dry ingredients are moistened. A sticky dough will result.





    Turn the dough out on a floured board. Flour your hands and knead the dough 3 or 4 times. Important: Do not overhandle the dough. Roll or pat to a 3/4-inch thickness, and cut with a biscuit cutter. Repeat with the scraps of dough. For soft-sided biscuits, place close together on a lightly greased baking sheet or in a lightly greased cast iron skillet (vegetable cooking spray works just fine). For biscuits that are crusty all around, place about an inch apart on a lightly greased baking sheet.

    My husband and I buy the bag of frozen biscuits. I'm sure there are several brands, but we like Pillsbury best. The bags can be found in the freezer section at the grocery stores. Just pop them into the microwave for a few seconds.

    Personally a use Bisquick. It has the recipe on the box and do not fuss or mix too much as they are light and fluffy if you do not fuss with the dough too much. Also, you always have the box so you won't lose the recipe.
    I, too, agree with Redhead. The recipe on the side of a Bisquick box is fast and easy. Don't cut your biscuits too large; keep them about 2 inches across. When I bake mine, I like to put some grated parmesan cheese on the top, after I brush it with melted butter. They bake up really tasty.





    If you like, you can add other flavors when you mix the batter -- and DON'T mix it too much!!!! You can add garlic powder, onion powder, herbs, or other tastes as you wish.

    What is a good biscuit? In the American sense of the word, biscuit is a shortened bread, to be eaten hot. It should be baked in small portions, delicately browned, but not hardened on the outside, moist and light from the steam so suddenly developed in it from the quick baking, rather thick with a very soft, fine-grained crumb, but flaky and tender rather than porous and elastic like bread. Many cooks fail to realize this difference and vigorously knead their biscuit, not knowing that as soon as flour is wet it develops a sticky, elastic substance called gluten, which becomes more rubbery the more it is worked. For the same reason that one does knead bread, one does not knead biscuit.





    The secret of baking good biscuit is to have the dough as soft as one can handle it, but not to handle it a bit more than is necessary after the wetting has been added to the flour, and to bake it in a quick oven.





    Cookery experts have experimented with every possible variation of the cookery recipe until they have not only established the standard recipe; but have ascertained exactly the result of varying it in any given detail. But it is not enough to follow the standard rule; there is something in one's technique. Experience proves that a cup of flour will make five large fat biscuits, or ten or twelve smaller ones, but that the smaller ones are a little superior; that a proper degree of lightness is secured by two teaspoons of baking powder to the cup of flour; that half a teaspoon of salt will take away the flat taste of the dough without giving an appreciably salty flavor; that there should be about half as much wetting as flour; that two tablespoons of fat is enough shortening to make a tender, flaky crust, but that more makes it too rich, more like pie crust, and therefore apt to give a greasy, heavy crumb.

Whether one chops the fat into the flour with knives, feeling that this is cleanlier than to rub it in with the hands, or that the heat of the hands tends to make the mixture waxy, or whether one feels confident in the cleanliness of one's hands and finds that if the materials are properly cold one can be surer of the right results when guided by the sense of touch, the point to be aimed at is a mixture in which there are no fatty lumps and no unshortened flour; it should feel slightly mealy.





    Whether the liquid to be added is water or milk, it should be cold, and the quantity should be half that of the flour used. This makes a dough too soft to handle. Stir it lightly just enough to wet the flour, and turn it out on a thickly floured board. By this method the dough should all come away clean from the pan. The top will be too soft and sticky to touch, but if you sprinkle it thickly with flour you can easily flatten it out with the hand or spatula and shape it up so it can be cut advantageously. The inside is still to wet to handle, so dip the cutter in flour to keep the dough from sticking to it. You may have to use a spatula to transfer the biscuits to the pan.





    Make 2-inch rounds, and put them in a pan which has been dusted with flour to prevent sticking. Never grease the pan, nor the outside of the biscuit.





    Lay the rounds so that they do not crowd each other too much, or as they rise they will become misshapen and too thick. Experiment has shown that they are much better when cooked twelve or fifteen minutes in the top of a quick oven, than twenty or thirty minutes lower down in a slow oven. Overcooking does not produce the ideal biscuit.





    Does the kind of shortening matter? Not greatly, though, of course, butter is more expensive than other fats, and gives a characteristic yellow color, as well as a characteristic flavor which many people think too pronounced for a hot bread to be eaten with butter. Many cooking fats and compounds contain cottonseed oil, which in its changed form is not in the least objectionable, but unchanged cottonseed oil gives off a strong, offensive odor and is therefore highly objectionable. If you use sour cream, of course, use less shortening 鈥?how much less depends on the quantity and richness of the cream.





    Of course, the measurements given here mean precise, level measurements. Accuracy in biscuit making, as in all other forms of cookery, makes all the difference between the unreliable products, the occasional brilliant successes and the frequent failures; of the hit-and-miss cook, and the consistently good products of the cook who knows not only the rule, but the principle by which she works. To summarize:

    grade school. You can make it a little dryer


    if need be by sprinkling more flour on your


    counter or cutting board. As you knead your dough


    it will pick up more of the flour.





    After you have it the right consistency you can


    shape your biscuits by hand or using a cookie


    cutter. I preferred pinching off a chunk, rolling


    it into a ball, and then patting it a little flat.


    It takes a little practice to get you biscuits all


    about the same size. If you want them more perfect,


    you can roll out your dough using a rolling pin and


    then cut them with a round cookie cutter. That


    would look neater when you have company over.





    Anyway, place you biscuits on a cookie sheet that


    is either lightly greased or lightly sprinkled with


    flour. If you use the flour option, be sure not to


    put too much.





    Bake these biscuits for rougly 18 minutes on the


    middle rack in your oven (depends upon how hot


    your oven is and how far this rack is from the


    top). If the rack is too low you can move the


    biscuits to the top rack the last minute of so


    to get them browned just the way you want. Leave


    them on the middle rack and thy should turn out


    lightly browned.





    Pop them out of the over and eat them while still


    piping hot. That's the only way to get the butter


    to melt just right.

    I have several but am on a bit of a time crunch and would love if someone could provide me with a website or their own special recipe for their pooch. I have a number of wacky ingredients in my kitchen, so it just has to be safe, easy, tasty, and quick.

    This is a GREAT biscuit recipe from the Good Food Cookbook for Dogs, by Donna Twichell Roberts. I made these for my dog, Atari -- once I got the dough rolled out, the baking took up most of the time (not much hands-on time at all!). Use parchment paper on your baking sheets, and cleanup is a breeze. It makes a huge batch, too. I got more than 100 with one batch.





    If you don't have a bone-shaped cookie cutter, just use a shot glass turned upside-down to make round cookies.





    Oh, and all ingredients are safe for dogs -- the author did extensive research. Also it smells yummy, there are no preservatives. My husband had one, even! He said it was good but not sweet enough for human consumption. :)

    2 cups Grape-Nuts cereal


    2 cups mashed banana (about 5 bananas, the riper the better -- I used up the ones my husband and I didn't want to eat anymore, LOL)

    1 teaspoon salt 1 tablespoon white sugar


    1/3 cup shortening


    1 cup milk





    DIRECTIONS:


    1. Preheat oven to 425 degrees F (220 degrees C).


    2. In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the shortening until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl.


    3. Turn out onto a floured surface, and knead 15 to 20 times. Pat or roll dough out to 1 inch thick. Cut biscuits with a large cutter or juice glass dipped in flour. Repeat until all dough is used. Brush off the excess flour, and place biscuits onto an ungreased baking sheet.


    4. Bake for 13 to 15 minutes in the preheated oven, or until edges begin to brown.





    In fact we had these last night with sausage gravy...pure heaven!!!!
    My grandmother handed down this recipe to me and she was a professional baker. It has never let me down and are wonderful!


    Angel Biscuits:


    1 pkg. dry yeast


    14 cups warm water


    2 1/2 cups flour


    1/2 tsp baking soda


    1 tsp baking powder


    1 tsp salt


    2 Tbsp sugar


    1/2 cup shortening


    1 cup buttermilk





    Preheat oven to 400 degrees. Let yeast dissolve in warm water and set aside.


    Mix all dry ingredients together as listed.


    Cut shortening into dry ingredients.


    Stir in buttermilk and yeast mixture.


    Knead dough lightly on floured board or countertop.


    Cut out biscuits.


    Place on a greased pan and allow to rise before baking


    (I cover mine with a damp towel and let sit on the stove...they will not rise as much as yeast rolls.)


    Place pan in oven and bake for about 12 - 15 minutes!

    You need baking powder for the leavening action in a traditional biscuit...there is no real way around that without a whole food chemistry lesson I am sure you wouldn't enjoy :). But, you can omit the shortening if you increase the fats and compensate for the moisture. The usual factor of increase is 25% of the fat yield. The moisture value is variable.





    For example, if I was making a biscuit and it called for 1c shortening, 1c butter and 1c water I would:





    -Omit the shortening


    -Increase the butter by 1/4c


    -decrease the water incrementally





    So your new recipe would be shortening=0, butter=1 1/4c and variable water.





    Cut your butter into the flour and leavening as usual. Measure out the water, but add only about 75% slowly, while incorporating. Only add enough water to get the right texture, which should be combined and slightly sticky, but not wet. Resist the urge to second guess and add more, butter has more water content to release than shortening during baking.





    Use the instructed resting time if you are rolling the biscuits. If you are dropping them you should be able to proceed as normal.





    This substitution formula will work for all quick breads and doughs. Yes, it will make the crumb ';shorter';, but what would you rather have? A short crumb full of yummy buttery goodness or a mouth full of hydrogenated who knows what?? I thought so! Get rid of the shortening and enjoy the buttery goodness!

    HOMEMADE BISCUIT MIX





    Basic Mix:





    4 cups all-purpose flour


    2 cups cake flour


    1/4 cup baking powder


    1 1/2 teaspoons salt


    1/2 lb. Crisco





    Sift together flours, baking powder and salt. 1 well combined, cut in Crisco using paddle attachment of mixer.





    Store in refrigerator for up to one month. Can be used as a substitute whenever biscuit mix is called for in a recipe.





    Biscuits:





    2 cups basic mix


    7/8 cup milk or half and half





    Measure 2 cups of basic mix into a bowl and stir in approximately 7/8 cup milk (or 1/2 c. plus 6 tablespoons) using a fork. For richer biscuits, use half and half, or mix cream with milk.





    Turn out onto a lightly floured board and knead for approximately 30 seconds, being careful not to over work the dough.





    Roll into a circle 1/2'; thick. Cut into biscuits using a floured biscuit cutter or slice into wedges. Place on a baking sheet.





    Press centers of biscuits with thumb or the back of a spoon, and brush lightly with cream or milk.





    Bake in a preheated 450掳F oven for 10 to 15 minutes.





    Makes 10 to 12 large biscuits.

    I have never had biscuits at the Villige inn. But these are superb! I make them all the time!

Toss mixture lightly with fork until liquid is absorbed. Knead dough lightly on floured board. divide dough into desired parts and place into greased pans. pat down dough lightly with hand. Bake in hot oven until lightly browned. Serve.
