I need a good buttermilk biscuit recipe.?

every time i make biscuits, they turn out hard. have tried not kneading so much, cold bowls, everything. any suggestions?I need a good buttermilk biscuit recipe.?
BUTTERMILK BISCUITS





1 pkg. piecrust mix (for 2 crust pie)


1 1/2 tsp. baking powder


1/8 tsp. baking soda


1/2 c. buttermilk or sour milk


Milk (optional)


1 tbsp. sugar (optional)


1/4 tsp. ground cinnamon (optional)





In a medium mixing bowl stir together piecrust mix, baking powder, and baking soda. Make a well in the center; add buttermilk or sour milk all at once. Using a fork, stir just until dough clings together. (The dough will be sticky.)


On a well-floured surface, knead dough gently for 10 to 12 strokes. Roll or pat dough to 1/2 inch thickness. Cut with a 2 1/2 inch biscuit cutter, dipping the cutter into flour between cuts. For shiny crusts, brush tops of biscuits with milk. Stir together sugar and cinnamon; sprinkle atop of biscuits.





Transfer biscuits to an ungreased baking sheet. Bake in a 450 degree oven for 8 to 10 minutes or until golden. Serve warm.





Makes 10 to 12 biscuits.








APPLESAUCE - WALNUT BISCUITS:





Prepare biscuits as directed, except add 1/2 teaspoon ground cinnamon and substitute 1/2 cup chunk-style applesauce for the buttermilk. Stir 1/3 cup chopped walnuts into the batter.

BUTTERMILK BISCUITS:


Preparation Time: 10 minutes


Bake: 12 minutes


12 Biscuits





Ingredients:


2 cups all-purpose flour (if using self-rising flour, omit baking powder and salt)


1 tablespoon sugar


录 teaspoon baking soda


2 teaspoons baking powder


1 teaspoon salt


陆 cup shortening


戮 cup buttermilk (If buttermilk is thick, using slightly more than 戮 cup may be necessary.)





Methods:


1. Heat oven to 450 degrees.





2. Mix flour, sugar, baking soda, baking powder, and salt in medium bowl. Cut in shortening using pastry blender or crisscrossing 2 knives, until mixture looks like fine crumbs. Stir in buttermilk until dough leaves side of bowl (dough will be soft and sticky).





3. Place dough on lightly floured surface. Knead lightly 10 times. Roll or pat 陆 inch thick. Cut with floured 2 to 2录-inche round cutter. Place on ungreased cookie sheet about 1 inch apart for crusty sides, touching for soft sides.





4. Bake 10 to 12 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

i just do... 1/3 cup oil, and 2/3 cup milk or buttermilk(whisked together)add to 2 cups flour, 3 teaspoons baking powder, and a bit of salt.





have all the dry ingredients mixed in the bowl and sort of make hole in the middle. then pour in the milk/oil and mix with your hands. just form a ball and press with hands to about a good inch and a half thick, either use a cookie cutter or small glass to form. bake at 425 degrees for about 12 min. oh and put a little softened butter on the tops of them to brown. this makes about 8-9 biscuits.


they are truly homeade and good.
