Is there an easy biscuit recipe without baking powder or shortening?

here is a recipe I copied from Paula Deen on the food network:





Beer Biscuits


Ingredients





* 4 cups biscuit mix (recommended: Bisquick)


* 1/4 to 1/2 cup sugar


* 1 (12-ounce) can of beer


* 2 tablespoons butter, melted





Directions





Preheat oven to 400 degrees.





Mix all ingredients well, adjusting the sugar according to how sweet a biscuit you prefer. Pour into well-greased muffin tins. Bake for 15 to 20 minutes. Serve with honey butter.

You need baking powder for the leavening action in a traditional biscuit...there is no real way around that without a whole food chemistry lesson I am sure you wouldn't enjoy :). But, you can omit the shortening if you increase the fats and compensate for the moisture. The usual factor of increase is 25% of the fat yield. The moisture value is variable.





For example, if I was making a biscuit and it called for 1c shortening, 1c butter and 1c water I would:





-Omit the shortening


-Increase the butter by 1/4c


-decrease the water incrementally





So your new recipe would be shortening=0, butter=1 1/4c and variable water.





Cut your butter into the flour and leavening as usual. Measure out the water, but add only about 75% slowly, while incorporating. Only add enough water to get the right texture, which should be combined and slightly sticky, but not wet. Resist the urge to second guess and add more, butter has more water content to release than shortening during baking.





Use the instructed resting time if you are rolling the biscuits. If you are dropping them you should be able to proceed as normal.





This substitution formula will work for all quick breads and doughs. Yes, it will make the crumb ';shorter';, but what would you rather have? A short crumb full of yummy buttery goodness or a mouth full of hydrogenated who knows what?? I thought so! Get rid of the shortening and enjoy the buttery goodness!

yea! you can always just use bisquick pancake mix. There's a recipe right on the box for biscuits! ^-^
