Many buttermilk biscuit recipes don't call for vinegar. However, if you want to make something that calls for buttermilk but you only have regular, the instructions will often say to add vinegar to the regular milk as a substitution (often around 1 tablespoon vinegar to a cup of milk). Maybe adding a little extra vinegar enhances the buttermilk flavor.
The acid works with the baking soda as a leavening. Does the recipe call for soda only or baking powder too? Sounds like an old recipe that is trying to up the acid to make the soda rise.
I've never heard of anybody adding vinegar to buttermilk biscuits. Seems really odd. I've got two different recipes in my kitchen and neither of them calls for vinegar.
i make my own biscuits and put a little baking powder in my mix, even though i use self rising flour, my son loves them
